Tapping Your Trees
February & March
Using freshly cleaned equipment, tap the tree by drilling a hole relative to your spile slightly upwards and inserting the spile by gently tapping the spile into the tree with a hammer. Next, hang your bucket and attach a lid.
Collect Sap & Make Syrup
February, March & April
Collect and store your sap daily as it is flowing. Use cheesecloth to filter out foreign material. Boil your sap until it turns golden in colour and transfer it to a smaller pot. Continue to boil your sap until it takes on a syrup consistency. Remove it from the heat and use a filter as many times as needed to remove any sediment. Finally, bottle your syrup!
Cleanup
April
When the outside temperatures return to above freezing, it's time to stop collecting sap. Remove your taps, buckets and lids from the tress and clean your equipment. Store your supplies for next year in a dry, dust-free location and enjoy your fresh, organic homemade syrup!
